Interview with chef Patrick Raaß

When you think of the "Schlosshotel Ischgl" now - what would you like to do here in culinary terms?
For the gourmet cuisine, I would like to bring the whole world into the Schlosshotel Ischgl, including unusual Asian influences. I would like to give the traditional cuisine of the Weinstube a new creative identity. The finest classics with regional products and passionate cooking.

How would you describe your gourmet dishes in one sentence?
My gourmet dishes consist of the best food products, are clearly structured, cosmopolitan, exciting and oriented towards the highest standards.

What do you and your team value most?
To provide guests with an unforgettable culinary evening that they will remember and enjoy for a long time to come.

Your favorite ingredient?
Citrus fruits of all kinds such as pomelo, grapefruit, etc.

Top regional and international cuisine with top products at the highest creative level.

What does the Michelin star mean to you?
It is a great honor and a confirmation of the hard work of our team. This award shows that passion and dedication go into every detail of our kitchen. It fills me with pride to see how our efforts pay off.

What is your culinary goal for the future?
To continuously develop the quality of our cuisine, to promote our team and to inspire even more guests with exceptional taste experiences.
